Winter-Time Soup Recipe

This one-pot wonder of a soup is an absolute powerhouse when it comes to dealing with colds and flu and boosting the immune system

1 red onion,
1 green chilli, or cayenne pepper
4 garlic cloves, crushed
2-inch piece fresh gingerroot, grated
2 tablespoons olive oil
2 medium sweet potatoes, diced, skins left on
4 ounces shiitake mushrooms, sliced
2 handfuls goji berries
vegetable stock, to cover
Sea salt and black pepper
1 tsp tameria

To Make flavouring-Put the onion, chilli, garlic, and ginger in a blender with the olive oil. Blend and add nut milk to make creamy.

Add the sweet potatoes and mushrooms to the food processor along with the goji berries and the flavouring from above. Blitz for 5 seconds then add enough warm vegetable stock to cover all the ingredients.

Leave for 5 minutes to marinate.

To Make Vegetable Stock:

2 Spring Onions
1 stick celery
½ Red pepper
½ Cup Mushrooms
1 Tsp Bragg’s amino
Warm water, add for consistency
Optional: 1 clove garlic, 1 tablespoon olive oil

Blend the above ingredients in a tall blender and mix with the warm water (42C)
